1.大虾踢除虾线。(从倒数第二节的空隙处扎入牙签,挑出虾线后就可以很轻松地整条抽出)

2.剪掉须子和脚

3.粉丝温水泡软后 铺在盘底备用

4.大虾从虾头后第一节开始,用剪刀剪开虾壳,留下最后一节不剪开

5.然后用刀从剪开的虾壳处下刀,切开虾肉,不要切段,然后里面还会有黑色的虾线,也处理掉

6.处理好的虾按照这样摆在粉丝之上

7.切蒜末、姜末混合起来

8.把一部分混合姜蒜末填入虾背中

9.比较特殊一点的调料这这二位,蒸鱼豉油、鲍鱼汁,另外再加鸡精、糖、料酒,少量水调和好汁

10.然后均匀洒在大虾和粉丝上,上锅蒸

11.蒸大约15分钟关火

12.蒸好的虾因为会收缩,所以无法保持原来的摆放形态,咱们把虾的摆放形态重新调整一下。

13.锅中加些底油,油热下入剩下的姜蒜末炒至金黄,加料酒烹香,洒把小葱马上关火

14.趁油热把姜蒜葱末油浇到大虾上,再洒些新鲜的小葱和小辣椒末(不吃辣可以不洒)装饰一下
